At the heart of Maison Delano Paris, Paolo Minelli brings his culinary expertise to life with a refined approach. Graduate of the Instituto Superiore di San Pellegrino Terme, Paolo honed his craft in Michelin-starred kitchens across the south of France before making his mark in Paris at the Park Hyatt Paris Vendôme (Pur’, 1 Michelin star) under Jean-François Rouquette.
With further experience at the prestigious Hôtel du Palais in Biarritz and La Palme d’Or in Cannes, he now offers a menu that is both elegant and thoughtful at the Delano Café. Each dish tells a story, blending his passion for cooking with Mediterranean influences.
